Hotpot started over a thousand years ago, somewhere between Tang dynasty kitchens and the Mongolian steppes.

Soldiers dropped meat into boiling pots; Sichuan families added spice and peppercorns; Cantonese cooks added seafood.

Every region left a mark—each contribution changing the flavor of the whole.

Today, hotpot is the same: a simmering mix of choices, timing, and attention. You put in what matters, you wait, and you share it with others.

That’s what The Hotpot is: a pot of ideas, curiosities, and stories from the world around us. Each essay is an ingredient. Together, we stir, taste, and see what connects—because the richness comes from the mix we create as a community.
